Pita Bread

- 1 package active dry yeast
- 1 t. sugar
- 1 1/2 c. warm water
- 1 t. salt
- 3 1/2 cups bread flour
- 1 t. olive oil
In a stand up mixer with a dough hook, combine yeast packet, sugar and warm water. Stir and let stand for about 5 minutes or until it gets foamy. Stir in salt and flour and mix on low speed until all of the flour is mixed in. On a floured surface, knead dough by hand until the dough is smooth. Place in an oiled bowl and let rest for 1 1/2 hours. Dough will double in size. Place a pizza stone on the lowest rack and preheat oven to 500 degrees. Punch dough down and cut into 8 pieces. Roll each piece into a ball. Let rest for another 15 minutes. Roll each dough ball out on a floured surface. Toss the pita onto the pizza stone for about 4 minutes. They will start to puff up.
