Balsamic Roasted Brussels Sprouts

- 1 lb Brussels sprouts, trimmed and cut in half
- 4 oz. bacon, 1/4" diced
- 1/4 cup olive oil
- salt and pepper
- 1 T. balsamic vinegar
Preheat oven to 400 degrees. Place Brussels sprouts on sheet pan. Add bacon, olive oil, salt and pepper. Toss with your hands and spread out in a single layer. Roast for 20-30 minutes or until the bacon is cooked through. Remove from oven and drizzle with balsamic vinegar.
