40 Cloves and a Chicken

- 1 whole chicken, cut into 8 pieces

- 1/2 cup + 2 T. olive oil

- 10 sprigs fresh thyme

- 40 cloves garlic, peeled

- salt and pepper

Pre-heat oven to 350 degrees. Season chicken with salt and pepper. Add 2 tablespoons of olive oil to a frying pan over high heat. Brown both sides of the chicken. Transfer chicken to a baking dish and add thyme, olive oil and garlic. Bake for 1 1/2 hours.
