Tex-Mex Casserole

- 1/2 head green cabbage, sliced in shreds
- 1 small onion, diced
- 2 T. butter
- salt and pepper
- 1 lb. 93/07 ground beef
- 1 packet taco seasoning
- 1 can green chiles
- 1/4 cup pickled jalapenos, sliced
- 1/4 cup salsa
- 1 1/2 cups fiesta blend cheese
Pre-heat oven to 350 degrees. Add butter, cabbage, onion to a skillet and fry until soft. Season with salt and pepper. Once its soft, remove and set aside. And brown the ground beef in the same pan. Add taco seasoning packet, green chiles, jalapenos, salsa and a 1/4 cup of water. Mix and bring to a boil to cook off the moisture. Add the cabbage mixture back in and combine. Spray a casserole dish with cooking spray. Dump mixture into the pan and add cheese on top. Bake for 15 minutes. This is a great low-carb option.
