Cheeseburger Soup

- 32 oz chicken broth

- 1 onion, diced

- 2 stalks celery, diced

- 4 potatoes, peeled and cubed

- 1.5 cups matchstick carrots

- 1 t. dried parsley

- 1 lb. ground beef, browned and drained

- 3 T. butter

- 1/4 cup flour

- 2 cups milk

- 8 oz Velveeta

Cook chicken broth, onion, celery, potatoes, carrots and parsley on low for 3 hours. Add the browned ground beef and cook for an additional 3 hours. On a hot frying pan melt butter and whisk in flour until flour is golden. Add the milk and continue whisking until smooth. Add the Velveeta cheese until melted, then pour all of the cheese sauce into the crockpot and let sit for a few minutes until everything is well combined.
