Cauliflower Soup

- 1 small onion, diced

- 2 T. butter

- 7 cups cauliflower, chopped

- 3 cups chicken stock

- 1 t. garlic powder

- 1 t. salt

- 4 oz. cream cheese

- 1 cup cheddar cheese

- 1/2 cup half and half

- 8 slices of bacon, cooked

On saute mode melt the butter and cook the onion. Add the cauliflower, chicken stock, garlic and salt. Cook on manual for 5 minutes and let it slow release. Use and immersion blender until smooth. Add cream cheese, cheddar cheese and half and half. Once everything is melted, serve. You can top it with bacon and cheese.
