Ham and Sweet Potato Hash

- 1 sweet potato, diced
- 1 shallot, diced
- 1 cup ham, cut into bite size pieces
- 6 eggs
- 1 avocado, sliced
Heat oil in a pan and cook the sweet potato and shallot until soft. Add the ham and cook until warm. Crack 6 eggs on top and cook to your liking. Using the lid will help the eggs cook evenly. Top with avocado when ready to serve.
