Moqueca - Brazilian Fish Stew

- 2 T. oil

- 1 onion, chopped

- 1 red bell pepper, chopped

- 1 orange bell pepper, chopped

- 1 yellow bell pepper, chopped

- 1 jalapeño, diced

- 2 cloves garlic, diced

- 1 t. paprika

- dash of cayenne

- 1 lb. walleye

- 1 large tomato, chopped

- 2 cups fish stock

- 1 can coconut milk

- 1 lime, cut into wedges

- salt and pepper

- green onions, chopped for garnish

Heat oil in your pan and begin sautéing onion, peppers and garlic until soft. Add seasoning and cook for a few more minutes. Add tomato and cook for a few more minutes. Lay fish on top of veggies and pour fish stock and coconut milk. Season with salt and pepper. Cover and cook for 20 - 30 minutes. Garnish with green onions and serve with lime wedges.
