Green Onion Pancakes with Carrot Slaw

Carrot Slaw:
- 1/2 cup rice vinegar
- 1/4 cup maple syrup
- 2 T. soy sauce
- 1 t. fresh minced ginger
- 4 cups shredded carrots
Pancakes:
- 2 cups flour
- 1.5 t. salt
- 1 t. baking powder
- 1 cup water
Filling:
- 4 green onions, sliced
- black pepper
- crushed red pepper
- sesame oil
Mix together vinegar, maple syrup, soy sauce and ginger. Add carrots and toss until coated. Cover and place in the fridge until you are ready to serve.
Mix together flour, salt, baking powder and water. Once it forms a ball, cover the bowl with a damp towel for about 20-30 minutes. Then, cut into 4 pieces. Roll each piece out and brush with sesame oil. Top with green onions, cracked black pepper and crushed red pepper. Roll it up like a snake, with all of the mixture on the inside. Coil the "snake" up like a snail. Then, roll out flat like a pancake. In a hot skillet fry until golden. Enjoy it topped with the carrot slaw.
