Tomato Tartlets

- 2 pie crusts (store bought is fine)
- 1 1/2 cups cherry tomatoes, halved
- 1/2 shallot, diced
- 1/2 cup mascarpone
- 2 T. parmesan
- 1 egg yolk
- salt and pepper
- fresh thyme
- olive oil
Roll out each pie crust and cut 4 smaller circles out of each crust. Pinch the sides of each crust. Combine mascarpone, parmesan, egg yolk, salt and pepper. Place a spoonful of the mixture on each tart. Add tomatoes and shallots on top. Sprinkle with thyme, sea salt and pepper. Drizzle with olive oil. Bake at 400 degree for 20-25 minutes.
