Fajitas

- 6 chicken thighs, sliced

- 1 onion, sliced

- 6 mini peppers

- 3 T. fajita seasoning (or to taste)

- 2 T. oil

Fajita Seasoning:

- 2 t. cumin

- 3 T. ancho chile powder

- 1/4 cup paprika

- 1 t. salt

- 1 t. pepper

Mix chicken, onion, peppers, oil and seasoning together. Let sit for at least an hour or overnight. Heat Blackstone grill or a skillet and fry everything until done.
