Calabacitas with Ground Beef

- 1 lb. ground beef

- 1 yellow squash, sliced

- 4 ears of corn, cut off cob

- 4 poblano peppers, diced

- 3 jalapeño peppers, diced

- 3 sweet peppers, diced

- 1 onion, diced

- 1 clove garlic, diced

- cumin, salt and pepper, to taste

- quesadilla cheese, optional

We made this on an outdoor griddle grill, but you could make it in the house too. Heat the griddle and brown hamburger. Add all of the veggies and seasoning and continue mixing. The squash will really cook down when it is almost done. Top it with a thin layer of quesadilla cheese. If you don't like spicy food, you could use more sweet peppers instead of jalapeños. You could also make this without the ground beef as a side dish.
