Smash Burgers

- 1 lb. 73/27 ground beef
- 1 lb. 80/20 ground beef
- burger seasoning
- American cheese slices
- cheddar cheese, shredded
Lightly mix the ground beef and seasoning. Try not to work the ground beef very much. Get the griddle very hot. Grab a handful and throw it down on a hot griddle, repeat. Take a spatula and press flat. Flip. When the burger is done add cheese until the cheese is melted.
