Caprese Grilled Chicken

- 6 chicken thighs
- 6 mozzarella slices
- 6 tomato slices
- balsamic reduction
- salt and pepper
Season chicken with salt and pepper. Combine 1 cup of balsamic vinegar and a spoonful of sugar. Cook on a low boil until it is thick enough to coat the back of your spoon. Grill The chicken until it is cooked. Add a slice of mozzarella on top of the chicken and move them to indirect heat. Grill the tomato slices for a few minutes and add them on top of the chicken and cheese. Remove from the grill. Add a drizzle of the balsamic reduction and top with fresh basil leaves.
