Chicken Tzatziki Bowl

Chicken:

- 1 lb. chicken thighs

- 1/4 cup Greek yogurt

- 1 T. olive oil

- 1/2 T. red wine vinegar

- 2 cloves garlic, chopped

- 1/2 t. turmeric

- 3/4 t. salt

- 1/8 t. red pepper flakes

- black pepper

Salad:

- 1 T. olive oil

- 1 T. red wine vinegar

- salt and pepper

- 1 English cucumber, sliced

- 1 cup cherry tomatoes, halved

- 1/4 onion, thinly sliced

Sauce:

- 1 T. dill

- 1/2 English cucumber, grated

- 4 cloves garlic, diced

- salt and pepper

- 1 T. olive oil

- 2 cups Greek yogurt

Cut chicken into 1 inch pieces. Combine yogurt, oil, vinegar, garlic, turmeric, salt and pepper. Add chicken and marinate. When ready to cook. Pre-heat grill. Place the chicken on skewers. Cook until the chicken is browned. For the salad, combine the dressing ingredients. Whisk together. Add tomatoes, cucumbers, and onions. Combine all ingredients of the sauce together. Let chill in the fridge. Start by filling a bowl with the salad. Add a scoop of the sauce on top and place a skewer on top. Enjoy.
