Migas Verde

- 8 eggs

- 3 T. butter

- 3 T. oil

- 4 corn tortillas, cut into strips

- 1 7oz. can green chiles

- 1/2 cup onion, chopped

- salt and pepper

- 3 T. salsa verde

- 1/2 cup mozzarella cheese, shredded

- 1/4 cup taco blend cheese, shredded

- 3 T. guacamole salsa

- 3 T. Mexican creama

In a skillet, heat butter and oil. Fry the tortilla strips until crispy and golden brown. Add onion and green chiles and continue to cook for about 5 more minutes. Season with salt and pepper. Whisk eggs in a bowl and add them to the pan. cook until done. Mix in salsa verde and remove from heat. Add the cheese and wait for it to melt. Finish by drizzling guacamole salsa and creama on top.
