Keto Taco Casserole

- 1 lb ground beef (I used 93%)
- 1 package cauliflower rice
- 1 t. cumin
- 1 t. parsley
- 1 t. turmeric
- 1 t. minced garlic
- 1 jalapeño, diced
- 1/2 bell pepper, diced
- 1/2 medium onion, diced
- 1 1/2 c. shredded cheddar cheese
- 1/2 c. guacamole salsa
- 1/2 c. Mexican crema (or sour cream)
- cilantro (optional)
Mix together ground beef and cauliflower rice. Add seasonings and continue to mix. Add chopped vegetables and mix. Finally add the shredded cheese and mix until everything is evenly incorporated. Preheat oven to 350 degrees. Pour mixture into a 9 X 13 pan. Top with any leftover cheese. Bake for 1 hour. Remove from oven and drizzle guacamole salsa and crema over casserole. Top with cilantro.
