African Peri Peri Chicken

- 12 chicken drum sticks
- 1 red bell pepper
- 6 dried red chiles
- 8 cloves of garlic
- 2 T. hot paprika
- 1 t. black pepper
- 3 T. vinegar
- 1 T. oregano
- 1/4 t. salt
- 1/2 cup oil
Take all of the ingredients except for the chicken and place in a blender and make a puree. Make deep slashes in the chicken. Place the chicken in a plastic bag and add the puree. Marinate it overnight or more. Grill the chicken on a high heat to sear both sides. Then, turn the grill down to about 250 degrees and cook the chicken for about 40- 50 minutes. Turn as often as needed to keep the chicken from sticking. Towards the end, I started spooning more sauce on the chicken.
