Chinese Five Spice Chicken

- whole chicken

- 4 cloves garlic, diced

- 1 thumb ginger, diced

- 1 T. rice wine vinegar

- 1/2 cup soy sauce

- 1/2 t. five spice

Soak chicken in clean water for 10 minutes. Then, massage chicken with white vinegar. Let the chicken sit for 10 minutes, then rinse with water. Mix everything else in a gallon size bag. Place chicken in the bag and rub with the seasoning. Marinade at least overnight. I marinated mine for 48 hours. Dump out the marinade and let the chicken skin start drying out, this might take up to 4 hours. This process will make the chicken skin very crispy and the meat very juicy. This recipe can be cooked in the oven or on your Traeger grill. I used the Traeger. Grill at 400 degrees for 30 minutes. Then, turn down to 250 degrees for 20 minutes. Finally, let the chicken sit for 10 to 15 minutes before serving. Enjoy it with hot sauce or plain.
