Sweet Potato Hash

- 1/3 lb. sausage

- 2 sweet potatoes, cubed

- 1 yukon or russet potato, cubed

- 5 or 6 eggs

In a non-stick skillet, brown the sausage. Add potatoes and keep frying. Put the lid on your skillet until the potatoes are tender. Once the potatoes are tender, make small indents into the mixture for your eggs. Crack the eggs on the mixture with the lid on for a few minutes. Cook until your eggs are the way you prefer. Enjoy with your favorite hot sauce.
