Patio Corn Salad

- 4 ears of corn
- 1/2 white onion, chopped
- 1 English cucumber, peeled and sliced
- 1 cup celery, chopped
- 6 oz. cherry tomatoes, halved or quartered
- 1/4 cup apple cider vinegar
- 1 T. olive oil
- salt and pepper
Grill the corn and slice the corn off the cob. Throw corn, onion, cucumber, celery, tomatoes into a bowl. Whisk the vinegar, oil, salt and pepper together to make a dressing. Pour the dressing over the ingredients. Chill and enjoy. This is perfect for a summer BBQ.
