Broccoli Cheese Soup

- 4 cups soup stock
- 3 cups chopped broccoli
- 1 cup matchstick carrots
- 1/2 onion, diced
- 1 cup whole milk
- 1 cup heavy cream
- 2 cups mozzarella cheese
- 2 cups cheddar cheese
Turn the crockpot on high and add soup stock, broccoli, carrots and onions. Cook for 4 hours, then use the immersion blender until its smooth. Add milk, heavy cream and cheese. Let the cheese melt and serve!
