Smoked Turkey

- 1 turkey
- 1 lemon, sliced
- 2 oranges, sliced
- 1 onion
- 8 sprigs of thyme
- 2 cloves garlic, sliced
- 1 cup sea salt
- 1 cup kosher salt
- 2 gallons water
Add everything into a large pot or clean 5 gallon bucket. Let the turkey soak in the brine for 18-24 hours. Place the turkey on the Traeger grill on "smoke" setting for 10 hours. Then turn the grill up to 250 degrees until finished.
