Chicken and Herbs Skillet in a Wine Sauce

- 2 T. olive oil
- 1/2 stick of butter
- 2 sprigs of rosemary
- 4 sprigs of thyme
- 2 cloves garlic, diced
- 6 chicken thighs (bone-in and skin)
- 7 oz. white wine
- 8 oz. sliced crimini Mmshrooms
- 1 can artichokes hearts
- 3 T. capers
Pre-heat oven to 350 degrees. In a cast iron pan heat the oil and start frying the rosemary. The rosemary will flavor the oil. Add the butter, garlic and thyme leaves and let the flavors continue to come together. Add the chicken skin side down. Once the skin looks golden brown, flip the chicken and add your white wine. This will make an incredible sauce. Add the mushrooms, artichokes and capers. Throw the skillet into the oven and cook it for about 40-45 minutes.
